Hot, fresh corn on the cob is an almost essential part of any cookout. Fortunately, it is also healthy for our bodies. Sweet corn is rich in vitamin B1, vitamin B5, folate, fiber, vitamin C, phosphorus, and manganese. The folate in sweet corn helps lower the levels of homocysteine which can damage blood vessels and increase one’s risk of heart attack.

Folate-rich diets are also associated with a reduced risk of colon cancer. Furthermore, one serving of sweet corn provides about one-quarter of the daily value of vitamin B1, thiamin, which is critical for brain cell / cognitive function. Sweet corn’s thiamin is an essential part in maintaining a healthy memory.

An Easy Way to Freeze Corn

  1. Shuck corn and cut raw corn off the cob.
  2. Place 12 cups of raw corn in kettle along with 3 cups of cool water, 1/3 cup of sugar, and 1 tablespoon of salt.
  3. Place on burner and cook on high for 10 minutes, stirring occasionally.
  4. Take corn mixture out of the kettle and put in a bowl. Place bowl in an ice water bath to cool the corn quickly.
  5. Place corn/water mixture in freezer bags or containers and freeze.
